Feta Cheese Apple And Spiced Pecan Salad Recipe

Ingredients

1 head Boston lettuce, torn

1 head red leaf lettuce, torn

1 Red Delicious apple, unpeeled and finely chopped

8 ounses feta cheese, crumbled

Spiced Pecans

1/2 cup oilve oil

2 Tbs white wine vinegar

1 Tbs plus 1 tsp Dijon mustard

1/4 tsp salt

1/4 tsp freshly ground pepper

Spiced Pecans

3 Tbs unsalted butter, melted

1 tsp ground cinnamon

1/4 tsp ground red pepper

Dash of hot sauce

1 2/3 cups pecan halves

Directions

Combine lettuce, apple, cheese, and Spiced Pecans in a large bowl

Toss gently and set aside

Combine olive oil, vinegar, mustart, salt and pepper in a jar.

Cover tightly and shake vigorously.

Pour dressing mixture over lettuce mixture

Toss gently

Serve immediately

Spiced Pecans

comine butter, salt, cinnamon, red pepper and hot sauce in a medium bowl

Add pecans, stirring to coat

Spread in a single layer on an ungreased baking sheet.

Bake at 300 degrees for 15 minutes, stirring once

Cool completely on baking sheet on a wire rack.

Yield 1 2/3 cups.

Hmmm....since I don't like Delicious apples I am thinking a Granny Smith or crunchy Gravenstein would be delish. I'm going to give it a whirl and see what happens.
