How to make it

  • Grease a 19 cm square baking pan. Line base & sides with double thickness wax paper, bringing paper 2 cm above the top edge of pan
  • Pre-heat oven to 300 degrees
  • Sift flours & baking soda - set aside
  • Combine fruit, dark chocolate, butter, sugar & sherry in a large saucepan
  • Stir constantly over medium/low heat, without boilng until chocolate & butter are melted
  • Bring to boil, then reduce heat & simmer uncovered for 10 mins
  • Transfer to large bowl & allow to cool to room temp.
  • Stir eggs into fruit mixture, then chocolate chips & then flour mixture
  • Spread evenly in prepared pan
  • Bake for about 2 hrs. Test with toothpick in center
  • Remove from oven & brush with extra sherry.
  • Cover tightly with tin foil & cool in pan
  • Cake will keep for up to 1 month in an airtight container or in the freezer for 3 months
