Don't wait until Christmas to enjoy the wonderful taste of fruit cake. This one is loaded with fruit, chocolate chips & sherry for a special treat

Ingredients
  • 2 1/4 cups golden raisins
  • 1 cup glace cherries - halved
  • 1 cup glace pineapple - chopped
  • 150 g dark chocolate - chopped
  • 185 g butter - softened
  • 3/4 cup brown sugar - firmly packed
  • 1 cup sweet sherry
  • 4 large eggs - lightly beaten
  • 155 g semi-sweet chocolate chips
  • 1 3/4 cups all-purpose flour
  • 1/4 cup self-raising flour
  • 1/2 tsp baking soda
  • 2 Tblspn sweet sherry - extra

Directions
  1. Grease a 19 cm square baking pan. Line base & sides with double thickness wax paper, bringing paper 2 cm above the top edge of pan
  2. Pre-heat oven to 300 degrees
  3. Sift flours & baking soda - set aside
  4. Combine fruit, dark chocolate, butter, sugar & sherry in a large saucepan
  5. Stir constantly over medium/low heat, without boilng until chocolate & butter are melted
  6. Bring to boil, then reduce heat & simmer uncovered for 10 mins
  7. Transfer to large bowl & allow to cool to room temp.
  8. Stir eggs into fruit mixture, then chocolate chips & then flour mixture
  9. Spread evenly in prepared pan
  10. Bake for about 2 hrs. Test with toothpick in center
  11. Remove from oven & brush with extra sherry.
  12. Cover tightly with tin foil & cool in pan
  13. Cake will keep for up to 1 month in an airtight container or in the freezer for 3 months
