Mexican Soup

- 4 slices bacon, diced shopping list
- 3/4 cup chopped onion shopping list
- 3/4 cup chopped celery shopping list
- 1 clove garlic, minced shopping list
- 1 (16 oz) can refried beans shopping list
- 1 (14 1/2 oz ) can chicken broth shopping list
- 1 (4 oz) can chopped green chiles,undrained shopping list
- 1/4 tsp chili powder shopping list
- 1/4 tsp pepper shopping list
- Shredded cheddar cheese shopping list
- Crushed tortilla chips shopping list
How to make it
- Cook bacon in a large saucepan until crisp, remove bacon
- Reserve drippins in saucepan
- Saute onion, celery and garlic in drippings over medium heat, stirring constantly, until tender
- Add refried beans, broth, green chiles, chili powder,and pepper, stir well
- Bring to a boil
- Reduce heat and simmer uncovered 10 minutes
- To serve, ladle soup into individual soup bowls.
- Sprinkle each serving with reserved bacon and top with cheese and crushed tortilla chips.
