Mexican Soup Recipe
Refried beans give this spicy soup its thick and creamy texture and green chiles its flavor punch.

Ingredients
  • 4 slices bacon, diced
  • 3/4 cup chopped onion
  • 3/4 cup chopped celery
  • 1 clove garlic, minced
  • 1 (16 oz) can refried beans
  • 1 (14 1/2 oz ) can chicken broth
  • 1 (4 oz) can chopped green chiles,undrained
  • 1/4 tsp chili powder
  • 1/4 tsp pepper
  • Shredded Cheddar cheese
  • Crushed tortilla chips

Directions
  1. Cook bacon in a large saucepan until crisp, remove bacon
  2. Reserve drippins in saucepan
  3. Saute onion, celery and garlic in drippings over medium heat, stirring constantly, until tender
  4. Add refried beans, broth, green chiles, chili powder,and pepper, stir well
  5. Bring to a boil
  6. Reduce heat and simmer uncovered 10 minutes
  7. To serve, ladle soup into individual soup bowls.
  8. Sprinkle each serving with reserved bacon and top with cheese and crushed tortilla chips.
