This dish serves with fried shredded galangal sprinkled on it and goes perfectly with steamed rice and chilli sauce.

Ingredients
  • 1 chicken, cut into 8 pieces
  • 4 tbsp shredded galangal
  • 5 tbsp oil
  • 2 salam leaves or bay leaves as a subtitutre
  • 1 stalk lemon grass, bruised
  • oil for deep-frying
  • Spices (ground):
  • 3 cloves garlic
  • 3 candlenuts, roasted
  • 1 tsp tamarind
  • 2 tsp chopped tumeric
  • 5 shallots
  • salt
  • sugar

Directions
  1. Combine chicken with ground spices and galangal and mix thoroughly.
  2. Heat oil in a frying pan and fry the chicken. Add salam leaves and lemon grass. Cover the pan and fry over low heat. Remove the chicken when it is half-cooked.
  3. Deep-fry the chicken until golden brown, then drain.
  4. Enjoy
