Galangal-fried Chicken

- 1 chicken, cut into 8 pieces shopping list
- 4 tbsp shredded galangal shopping list
- 5 tbsp oil shopping list
- 2 salam leaves or bay leaves as a subtitutre shopping list
- 1 stalk lemon grass, bruised shopping list
- oil for deep-frying shopping list
- spices (ground): shopping list
- 3 cloves garlic shopping list
- 3 candlenuts, roasted shopping list
- 1 tsp tamarind shopping list
- 2 tsp chopped tumeric shopping list
- 5 shallots shopping list
- salt shopping list
- sugar shopping list
How to make it
- Combine chicken with ground spices and galangal and mix thoroughly.
- Heat oil in a frying pan and fry the chicken. Add salam leaves and lemon grass. Cover the pan and fry over low heat. Remove the chicken when it is half-cooked.
- Deep-fry the chicken until golden brown, then drain.
