Ingredients

1 lb ground beef

1/2 cup fresh bread crumbs

1 egg

1 tsp salt

2 cups water

1 cup uncooked rice

2 large carrots, sliced

1/2 cup chopped green pepper

1/4 cup chopped onion

1/2 lb Velveeta cheese, cubed

Directions

Combine meat, bread crumbs, egg and salt. Shape into

18 meatballs. Brown on all sides in large skillet. Drain. Add water, rice, carrots, green pepper and onion. Cover and simmer 25 minutes. Add cheese. Heat until cheese melts.
