Ingredients
- 2 sweet potatoes, peeled, diced and cooked shopping list
- 1 T. vegetable oil shopping list
- 1 lb. kielbasa or smoked sausage shopping list
- 2 red peppers, chopped shopping list
- 1 onion, chopped shopping list
- 2 tsp. minced garlic shopping list
- 1 cup salsa shopping list
- 1 tsp. cumin shopping list
- salt and pepper to taste shopping list
How to make it
- In a skillet, brown the sausage in the oil. Add the peppers, onion and garlic. Cook until the vegetables are tender. Add the salsa and sweet potatoes. Salt and pepper, if needed. May be served over rice.
