Mexican Coleslaw

- 2 1/2 cups shredded cabbage shopping list
- 1 (15 ounce) can black beans, drained shopping list
- 1/2 cup shredded carrots shopping list
- 1/2 cup diced purple onion shopping list
- 1/4 cup chopped fresh parsley shopping list
- 1/2 cup plain low-fat yogurt shopping list
- 1/2 cup salsa shopping list
- 1 Tbs plus 1 tsp mayonnaise shopping list
- 2 tsp red wine vinegar shopping list
- 2 tsp fresh lime juice shopping list
How to make it
- Combine cabbage, black beans, carrots, onion, and parsley in a large bowl
- Toss gently.
- Set cabbage mixture aside.
- Combine yogurt, salsa, mayonnaise, vinegar, and lime juice in a small bowl, stirring with a wire whisk until blended.
- Pour over cabbage mixture, toss gently
- Serve immediately or cover and chill 2 hours.
