Baja Breakfast Tortillas Recipe
BAJA BREAKFAST TORTILLAS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Barker Estate in Tulsa, Oklahoma in 1982.

Ingredients
  • 2 tablespoons butter
  • 3 tablespoons all purpose flour
  • 1/2 cup chicken stock
  • 1 cup milk
  • 1 teaspoon white onion grated
  • 2 tablespoon canned diced green chilies
  • 1/4 teaspoon salt
  • 1/2 cup shredded pepper jack cheese
  • 3 hard cooked eggs sliced
  • 1/2 cup cooked ham chopped
  • 6 flour tortillas

Directions
  1. Preheat oven to 375 then melt butter in saucepan and stir in flour then cook and stir 2 minutes.
  2. Stir in stock and milk then cook stirring constantly over medium heat until thickened.
  3. Remove from heat and stir in onion, chilies, salt and cheese.
  4. Arrange 1/2 sliced egg and 1 rounded tablespoon ham on each tortilla.
  5. Spoon 2 tablespoons cheese sauce over ham.
  6. Fold both sides of each tortilla over filling then fold top and bottom to slightly overlap in center.
  7. Place filled tortillas folded side down in a shallow baking pan then cover with foil.
  8. Bake 12 minutes or until heated through then serve warm.
