Baja Breakfast Tortillas

- 2 tablespoons butter shopping list
- 3 tablespoons all purpose flour shopping list
- 1/2 cup chicken stock shopping list
- 1 cup milk shopping list
- 1 teaspoon white onion grated shopping list
- 2 tablespoon canned diced green chilies shopping list
- 1/4 teaspoon salt shopping list
- 1/2 cup shredded pepper jack cheese shopping list
- 3 hard cooked eggs sliced shopping list
- 1/2 cup cooked ham chopped shopping list
- 6 flour tortillas shopping list
How to make it
- Preheat oven to 375 then melt butter in saucepan and stir in flour then cook and stir 2 minutes.
- Stir in stock and milk then cook stirring constantly over medium heat until thickened.
- Remove from heat and stir in onion, chilies, salt and cheese.
- Arrange 1/2 sliced egg and 1 rounded tablespoon ham on each tortilla.
- Spoon 2 tablespoons cheese sauce over ham.
- Fold both sides of each tortilla over filling then fold top and bottom to slightly overlap in center.
- Place filled tortillas folded side down in a shallow baking pan then cover with foil.
- Bake 12 minutes or until heated through then serve warm.
