Bacon Mushroom Omelet

- 2 tablespoon olive oil shopping list
- 1/2 pound middle back or streaky bacon chopped shopping list
- 4 ounces button mushrooms sliced shopping list
- 4 spring onions finely chopped shopping list
- 6 eggs shopping list
- 2 tablespoon freshly chopped parsley shopping list
- 1/4 teaspoon salt shopping list
- 1/4 teaspoon freshly ground black pepper shopping list
How to make it
- Heat oil in frying pan and cook bacon 5 minutes stirring occasionally until golden.
- Add mushrooms and onion then cook 3 minutes longer.
- Crack eggs into a jug and beat together with parsley and seasoning.
- Pour egg mixture into pan and cook over medium heat 6 minutes.
- Place pan under a hot grill for 4 minutes until omelet has set and the top is golden.
- Turn out onto a warmed plate and serve immediately with a green salad.
