warm caramelized orange sauce for icecream

- 2 cans mandarin orange segments, in juice shopping list
- 1 tbsp butter shopping list
- 1 tbsp sugar shopping list
- pinch of cinnamon shopping list
- 3 cups vanilla ice cream (or frozen yogurt or soy ice cream) shopping list
- fresh mint, for garnish (optional) shopping list
How to make it
- Drain the mandarin oranges but reserve the juice.
- In a pan, melt the butter over medium-high heat and then add in the orange segments. Add in the sugar and cinnamon and saute until orange segments begin to caramelize. (they may fall apart a bit, but that is ok! the flavours are being released here, so no worries...)
- Turn the heat to high and then add in the reserved orange juice. Bring it to a boil and allow the mixture to reduce it's volume by 1/2. (this takes about 5-8 minutes)
- Scoop vanilla icecream into individual bowls and spoon warm sauce over top. Garnish w/ a sprig of mint. :-)
- ENJOY!
