Ingredients
  • 2 cans mandarin orange segments, in juice
  • 1 tbsp butter
  • 1 tbsp sugar
  • pinch of cinnamon
  • 3 cups vanilla ice cream (or frozen yogurt or soy ice cream)
  • fresh mint, for garnish (optional)

Directions
  1. Drain the mandarin oranges but reserve the juice.
  2. In a pan, melt the butter over medium-high heat and then add in the orange segments. Add in the sugar and cinnamon and saute until orange segments begin to caramelize. (they may fall apart a bit, but that is ok! the flavours are being released here, so no worries...)
  3. Turn the heat to high and then add in the reserved orange juice. Bring it to a boil and allow the mixture to reduce it's volume by 1/2. (this takes about 5-8 minutes)
  4. Scoop vanilla icecream into individual bowls and spoon warm sauce over top. Garnish w/ a sprig of mint. :-)
  5. ENJOY!
