A simple chicken recipe that anyone can make and enjoy!

Ingredients
  • 3-4 lb.roasting chicken,rinsed and cleaned out.
  • 1 lemon
  • butter
  • black pepper to taste
  • fresh rosemary sprigs (about 3)
  • coarse sea salt

Directions
  1. Preheat oven to 325 degrees.
  2. Salt and pepper the chicken cavity.
  3. Add 2 of the rosemary sprigs to the inside.
  4. Cut off a small slice of lemon and set aside.
  5. Place the remaining lemon inside the chicken.
  6. Butter the skin,coating every part.
  7. Squeeze the lemon slice onto the top and sprinkle with more pepper,salt and cut up remaining rosemary.
  8. Bake until skin is golden and crispy (approx 2 hrs)
  9. Discard the inner lemon and serve.
  10. YUM!!!
