CHICKEN -PUMPKIN -CASSEROLE

- 2 - tablespoon s ( 30 ml) groundnut ...peanut oil shopping list
- 4 - garlic cloves, halved and crushed shopping list
- 1- ounce-( 25 gms) galangal..peeled and finely sliced shopping list
- 2- chillies shopping list
- 2- tablespoon ( 30 ml) kroeung shopping list
- 1 -tablespoon( 15 ml) palm sugar shopping list
- 12- chicken thighs shopping list
- 2 - tablespoon ( 30 ml0 tuk prahoc shopping list
- a handful of kaffir lime leaves shopping list
- 2 - 1/2 cups ( 600 ml) coconut milk shopping list
- 12 - ounces ( 350 gms) pumpkin flesh, seeded and cut into bite-sized chunks. shopping list
- 1 - long aubergine ( eggplant)..quartered lengthways, and each quarter cut into 3 shopping list
- 4 ounces - ( 115 gms) long beans-trimmed and cut into 2 inch lengths shopping list
- 3- tomatoes, skinned, quartered and seeded shopping list
- 1 - handful spinach leaves washed and trimmed shopping list
- a small bunch basil leaves shopping list
- sea salt and ground black pepper shopping list
- 1 - small bunch fresh coriander........stalks removed on all and coarsley chopped for garnish shopping list
- 1 - small bunch cilantro shopping list
- 1 - small bunch fresh mint shopping list
- jasmine rice, to serve shopping list
How to make it
- heat the peanut oil in a wok or heavy pan.
- add the garlic, galangal, whole chillies and stir fry until fragrant and golden.
- add the kroeung and the palm sugar, stirring until they have dissolved.
- add the chicken thighs to the pan, tossing them well and stir the tuk prahoc, kaffir limes leaves, and coconut milk.
- reduce the heat and simmer for 10 minutes, .
- add the pumpkin, eggplant and beans.......
- simmer for a further 10 minutes until tender..
- if you need to add more liquid stir in a little water...
- add the tomatoes and spinach and basil leaves.
- cook for a firther 2 minutes...then season to taste..
- garnish with coriander, mint, and .cilantro
- serve hot over jasmine rice.....................
