How to make it

  • heat the peanut oil in a wok or heavy pan.
  • add the garlic, galangal, whole chillies and stir fry until fragrant and golden.
  • add the kroeung and the palm sugar, stirring until they have dissolved.
  • add the chicken thighs to the pan, tossing them well and stir the tuk prahoc, kaffir limes leaves, and coconut milk.
  • reduce the heat and simmer for 10 minutes, .
  • add the pumpkin, eggplant and beans.......
  • simmer for a further 10 minutes until tender..
  • if you need to add more liquid stir in a little water...
  • add the tomatoes and spinach and basil leaves.
  • cook for a firther 2 minutes...then season to taste..
  • garnish with coriander, mint, and .cilantro
  • serve hot over jasmine rice.....................
