How to make it

  • In a shallow nonporous dish or bowl combine the salsa, mustard and lime juice. Mix well.
  • Add chicken, cover dish and refrigerate.
  • Marinate for at least 30 minutes.
  • Remove chicken from marinade and grill or bake until cooked thru.. Meanwhile, boil remaining marinade in a saucepan for 4 to 5 minutes.
  • Cook rice according to package directions.
  • Top rice with chicken and remaining marinade.
  • (a dollop of plain yogurt or light sour cream and a lime wedge make for a nice presentation)
