Lime Chicken Picante

- 1/2 cup chunky or restaurant style salsa shopping list
- 1/4 cup Dijon-style prepared mustard shopping list
- 2 tablespoons lime juice shopping list
- 4 skinless, boneless chicken breasts shopping list
- brown rice shopping list
How to make it
- In a shallow nonporous dish or bowl combine the salsa, mustard and lime juice. Mix well.
- Add chicken, cover dish and refrigerate.
- Marinate for at least 30 minutes.
- Remove chicken from marinade and grill or bake until cooked thru.. Meanwhile, boil remaining marinade in a saucepan for 4 to 5 minutes.
- Cook rice according to package directions.
- Top rice with chicken and remaining marinade.
- (a dollop of plain yogurt or light sour cream and a lime wedge make for a nice presentation)
