How to make it

  • Combine garlic, ginger and spices in a large bowl
  • Add fish- toss carefully to coat
  • Heat oil in large non-stick frying pan- cook fish in batches until browned both sides and cooked as desired
  • Couscous: combine couscous, water and butter in large bowl. Cover and stand about 5 mins or until water is absorbed, fluffing with fork occassionally. Stir in remaining ingredients.
  • Divide couscous among plates, top with fish. Seve with combined yoghurt and coriander
