Tangy Red Grain Salad

- 3/4 cup water shopping list
- 1/2 tsp kosher salt shopping list
- 1/4 cup dry bulgur shopping list
- 100g raw beets, coarsely grated (peeled if necessary) shopping list
- 1 tbsp dried cranberries shopping list
- 1 tbsp seasoned rice wine vinegar shopping list
- 1/2 tbsp vegetable broth shopping list
- black pepper to taste shopping list
How to make it
- Combine water and salt in a small pot, bring to a boil.
- Add bulgur and simmer 5 minutes. Remove from heat, cover and let stand 15 minutes.
- Stir in beets, cranberries, vinegar, broth and pepper.
- Serve immediately or chill.
