Tangy Red Grain Salad Recipe
I love beets, and paired with the zing from dried cranberries and rice wine vinegar and the subtle texture of the bulgur this salad is a winner of a side dish!

Ingredients
  • 3/4 cup water
  • 1/2 tsp kosher salt
  • 1/4 cup dry bulgur
  • 100g raw beets, coarsely grated (peeled if necessary)
  • 1 tbsp dried cranberries
  • 1 tbsp seasoned rice wine vinegar
  • 1/2 tbsp vegetable broth
  • Black pepper to taste

Directions
  1. Combine water and salt in a small pot, bring to a boil.
  2. Add bulgur and simmer 5 minutes. Remove from heat, cover and let stand 15 minutes.
  3. Stir in beets, cranberries, vinegar, broth and pepper.
  4. Serve immediately or chill.

Hi jojoba ! this sounds very good. Could you clue me in on a red wine vinegar company that I might find in Fort Erie? (I live across the Peace Bridge). The stuff I have found stateside is yucky. thanks lots!!


I buy Unico brand, or sometimes the store brand. I haven't found anythigng really spectactular these days. Sherry vinegar used to be my favourite though!
