Strawberry Walnut Skillet Cake

- 1/2 stick butter shopping list
- 3/4 cup packed light brown sugar shopping list
- 1 3/4 cups frozen or fresh strawberries(i chopped them up a little bit but maintained some chunks) shopping list
- 3/4 cup coarsely chopped walnuts shopping list
- 1 1/2 cups flour shopping list
- 1 1/2 tsp baking powder shopping list
- 1 tsp baking soda shopping list
- 1/2 tsp salt shopping list
- 1 stick butter, softened shopping list
- 3/4 cup sugar shopping list
- 2 large eggs shopping list
- 1/2 tsp vanilla shopping list
- 3/4 cup buttermilk shopping list
How to make it
- Melt 1/2 stick butter in skillet over medium heat. Stir in brown sugar and simmer 1-2 minutes
- Stir in strawberries and walnuts to skillet mixture. Remove from heat
- Preheat oven to 350 degrees
- Whisk together flour, baking powder, baking soda, and salt.
- Beat together butter and sugar in large both with electric mixture on high until light and fluffy.
- Add eggs 1 at a time and beat well after each addition
- Beat in vanilla.
- On low speed alternate beating in flour and buttermilk until just combined.
- Return skillet topping to heat until it begins to bubble.
- Spoon batter carefully on top of skillet mixture then transfer to oven.
- Bake 20-25 minutes.
- Remove from oven and cool in skillet for 15 minutes.
- Invert onto plate and allow 1 more hour of cooling
- Serve with ice cream or whipped topping if desired!
