How to make it

  • Cook pasta according to package directions.
  • In large skillet over medium heat, saute chicken cubes in 2 to 3 tablespoons butter, 2 cloves mined garlic and Italian seasoning.
  • Saute until chicken juices run clear.
  • Remove from skillet with slotted spoon and set aside.
  • Add 4 tablespoons butter to skillet. Melt.
  • Add garlic and saute 1 minute.
  • Stir in flour, 1 teaspoon salt and white pepper. Cook 2 minutes, stirring constantly.
  • Slowly add milk and half and half. Cook, stirring, until thickened.
  • Stir in Parmesan and Monterey Jack cheese. Stir until melted.
  • Add jalapeno peppers and chicken. Taste. Adjust "heat" with jalapeno juice.
  • Add sauce to cooked pasta.

    Loved this recipe! Wanted something for my boyfriends b-day and this is it! I can't boil water, but this was easy and turned out great. The strong garlic smell worried me at first, but when I was finished it wasn't too much. I love cheese and jalapenos so I might add more of those next time.
