  • BEAN BURGER POCKETS
  • This recipe came from an estate sale. I obtained it when I purchased the family collection from the Huddleston Estate in Arlington, Texas in 1989.
  • 1-1/4 pounds ground beef
  • 14-1/2 ounce can diced tomatoes with juice
  • 8 ounce can tomato sauce
  • 1/2 cup chopped white onion
  • 1 garlic clove minced
  • 1 tablespoon brown sugar
  • 1 teaspoon seasoned salt
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/8 teaspoon dried thyme
  • 1/8 teaspoon savory
  • 1/8 teaspoon oregano
  • 1/8 teaspoon parsley flakes
  • 8-3/4 ounce can navy beans rinsed and drained
  • 8-3/4 ounce can kidney beans rinsed and drained
  • 8-3/4 ounce can lima beans rinsed and drained
  • 5 pita breads halved
  • 1/2 cup shredded cheddar cheese

Directions
  1. In heavy saucepan brown beef then drain.
  2. Add tomatoes, tomato sauce, onion, garlic, brown sugar and seasonings.
  3. Cover and simmer 1 hour stirring occasionally then stir in beans and heat through.
  4. Spoon 1/2 cup mixture into each pita half then top with cheese if desired.
