Beef And Mushroom Thai Noodles Recipe
BEEF AND MUSHROOM THAI NOODLES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Huddleston Estate in Arlington, Texas in 1989.

Ingredients
  • 1 pound medium Thai rice stick noodles
  • 1 cup fresh bean sprouts divided
  • 5 green onions
  • 1/4 cup vegetable oil
  • 1 cup sautéed beef
  • 1 cup chopped black mushrooms
  • 2 teaspoons Thai fish sauce
  • 1 tablespoon vinegar
  • 1 tablespoon tamarind juice
  • 3 tablespoons granulated sugar
  • 5 cayenne peppers ground then soaked in 2 tablespoons vinegar and drained
  • 4 tablespoons chopped peanuts

Directions
  1. Soak rice noodles in cool water for 1 hour then drain.
  2. Rinse half the bean sprouts in water then cut green onions in half.
  3. Cut bottoms into slices and cut tops into 1” strips then set aside.
  4. Heat oil in wok then add beef and a little water.
  5. Add mushrooms and stir 30 seconds.
  6. Add presoaked noodles to wok and cook over high heat.
  7. Add previously soaked bean sprouts, fish sauce, vinegar, tamarind juice and sugar.
  8. Stir fry until noodles become brown from the sauce and are tender.
  9. Add onion top strips then turn over a few times and place on serving plate.
  10. Garnish with unsoaked bean sprouts and remaining onion bottoms.
  11. Add cayenne peppers and peanuts.
