Beef And Broccoli Stir Fry Recipe
BEEF AND BROCCOLI STIR FRY This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hood Estate in Malakoff, Texas in 1990.

Ingredients
  • 3/4 pound beef tenderloin
  • 1/2 cup beef stock
  • 1 tablespoon cornstarch
  • 1 tablespoon soy sauce
  • 1 tablespoon dry sherry
  • 4 tablespoons peanut oil
  • 1 pound broccoli florets
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon salt

Directions
  1. Cut beef into thin strips and set aside.
  2. In a small cup or bowl stir together stock, cornstarch, soy sauce and sherry then set aside.
  3. In a wok or large heavy skillet heat 2 tablespoons of the oil until very hot.
  4. Add broccoli and toss and stir for 2 minutes.
  5. Cover and cook for 2 minutes more tossing once or twice then remove to a side dish.
  6. Return skillet to high and add remaining oil and heat just until it is smoking hot.
  7. Add strips of beef and stir and toss rapidly for 2 minutes.
  8. Stir up stock and cornstarch mixture then add to skillet.
  9. Add broccoli, red pepper flakes and salt then stir and toss rapidly for 1 minute.
  10. Serve immediately.
