How to make it

  • Preheat oven to 375.
  • Boil 1 3/4 cup water with a pinch of salt, add 1 cup basmati rice and cook about 10 minutes covered until well steamed, later measure out approx. 1/2-3/4 cup cooked rice, (depends on size of peppers).
  • Meanwhile saute ground sausage, onion, garlic. When sausage is cooked through add chopped mushrooms, shredded cabbage, shredded carrots or zuchini, red pepper flakes ( just a pinch), sea salt, and pepper to taste.
  • Mix 1/2 a cup cooked rice with sausage mixture and spoon into halfed green peppers until full. It helps to have a small square pyrex the so the peppers are snug together and won't tip.
  • Top each with 1/4 cup of your favorite cheese and bake until cheese is melted and peppers are cooked through, about 15-20 minutes.
