I worked over a dozen sauce recipes to finally come up with this one.

Ingredients
  • 1 lb. ground beef
  • 1 lb. ground pork
  • Hot Italian Sausages (2 per guest)
  • 2 med. onions, diced
  • 6 cloves garlic, sliced
  • 2 med. green bell peppers, diced
  • 1 lb. cremini or baby bella mushrooms, sliced
  • 1 lg (28 oz) can cut tomatoes or home canned quart
  • 1 (6 oz) can tomato paste
  • 2 bay leaves
  • 1 tsp. salt
  • 1 tsp. fennel seed, crushed
  • 1 tsp. basil leaves or 3 fresh
  • 1/2 tsp marjoram
  • 1 tsp. parsley flakes or 3 fresh
  • 1/2 tsp. thyme leaves
  • 1/2 tsp oregana leaves or 3 fresh
  • 2 to 3 TBSP. molasses
  • 1 + cup of red wine
  • I try to use as many fresh herbs and spices as possible from my garden or the market.

Directions
  1. Brown ground meats in large fry pan.
  2. Drain fat; place in bottom of crockpot or large stock pot if doing this stove top
  3. Brown the sausages whole, 1 or 2 per person, you know your guests
  4. Drain sausage on paper towels and set aside until later
  5. Add olive oil if the meats don't leave enough fat
  6. Saute the onions until lucid
  7. Add sliced garlic and saute 3 to 4 more minutes
  8. Add green pepper and mushrooms and saute about 5 more minutes
  9. Place all of this on top of meats in pot
  10. Stir
  11. Add the tomatoes and all of the spices.
  12. Add the wine - to your taste
  13. Stir together really well
  14. Bring to a boil and then simmer 4 to 6 hours on stove top stirring every 30 minutes or so
  15. Bring to boil on high in crockpot and then turn to low for 6 to 8 hours
  16. Should only need one or two stirs ( but maybe more tastings)
  17. Don't be afraid to add anything else as it cooks along
  18. Whether stock pot or crockpot stuff the sausages in for the last hour of cooking.
  19. Remember to remove bay leaves before serving
  20. Prepare your favorite pasta
  21. Serve with lots of freshly grated Romano-Parmesan Cheese or the Four-Italian cheese blend
