This is another recipe I found on the web and made this past week. Incredible taste combination and a real hit with my family. Enjoy

Ingredients
  • 4 halibut filets
  • 1/2 cup cottage cheese
  • 3 ounces canned pitted kalamata olives
  • 1 clove garlic finely chopped
  • 1 ounce arugula
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 small white onion finely chopped
  • 1 tablespoon olive oil
  • 1/2 cup dry white wine
  • 1/2 teaspoon salt
  • 4 slices lemon and a few arugula leaves for garnish

Directions
  1. Coarsely chop olives and arugula leaves.
  2. Combine cottage cheese, chopped olives, arugula leaves, garlic and black pepper.
  3. Mix well then adjust seasoning with salt.
  4. Cover fish fillets with a layer of the olive spread then set heavy pan over medium heat.
  5. Add olive oil and chopped onions then cook until onions are soft but not browned.
  6. Add wine and salt then bring to a boil and place fish fillets in pan.
  7. Place under broil and broil 10 minutes then carefully remove fillets from pan.
  8. Sprinkle with a bit of cooking liquid then garnish with lemon slices and arugula leaves.
