Caeser Salad Dressing Recipe

Ingredients

1 clove of garlic

1 anchovy, minced

1 egg, coddled

1/2 lemon, juiced

2t of olive oil

dash of Worcestershire

dash of Tabasco

salt and pepper

Directions

To coddle the egg place it in boiling water for 2 minutes. Break the egg into a bowl and whisk.

Add lemon juice while continuously whisking.

Add garlic (minced if you want it in the dressing), anchovies, salt and pepper, Worcestershire and Tabasco.

Slowly add oil whisking continuously to emulsify.

Toss the dressing with romaine lettuce, grated Parmesan and homemade croutons.

Just FYI this isn't vegetarian. Anchovies are in it, so this shouldn't be tagged vegetarian.

This makes a lot of dressing, but if you need to multiply it I think it would be okay - I sometimes add more garlic or anchovies if that is what I am in the mood for.

I had a "boyfriend" years ago who was a head waiter in a restaurant in Sea Cliff L. I. I used to order the salad everytime I ate there! This was before the "raw" egg scandal!!
I really don't like anchovies...would it still tast authentic caeser without them?
