How to make it

  • In a small sauce pan over medium heat, heat reserved syup from the peaches until hot enough to dissolve gelatin. Pour lemon flavored gelatin into hot syrup and stir to dissolve; allow to cool.
  • In a large bowl, combine gelatin, peaches, cottage cheese and pecans. Whip cream to medium consistency; fold into gelatin mixture. Pour into a 6-cup serving dish and chill well. Salad will not be firm enough to unmold.
