How to make it

  • Filling:
  • Beat 1 cup sugar into 4 beaten eggs, then stir in 3-8 ounce packages cream cheese (softened to room temperature), 1 1/2 pint sour cream, 1 teaspoon lemon juice and grated rind of 1 lemon. 1 teaspoon vanilla.
  • Beat together until smooth, then fold in 1 Tablespoon of melted butter.
  • Pour the mixture into the crust.
  • Bake at 350 for 45 minutes.
  • Cool and refrigerate.
  • It will keep for a week.
