Southwest Chicken Casserole

- 3 lbs boneless skinless chicken thighs shopping list
- 2 cans cream-style corn shopping list
- 1 1/2 cups Minute Rice shopping list
- 1 1/4 cups water shopping list
- taco seasoning shopping list
How to make it
- Pour uncooked minute rice into a 9x13 baking pan.
- Mix taco seasoning (I used about 1/8 cup) into the rice.
- Placce chicken in a layer over the rice.
- Pour cream corn over the chicken
- Pour water over the whole thing (carefully, try not to wash the corn off the chicken).
- Bake at 400 degrees for 1 hour.
