This was a creation out of desparation to use what was immediately available in the house and feed the family in a reasonable amount of time.

Ingredients
  • 3 lbs boneless skinless chicken thighs
  • 2 cans cream-style corn
  • 1 1/2 cups minute rice
  • 1 1/4 cups water
  • taco seasoning

Directions
  1. Pour uncooked minute rice into a 9x13 baking pan.
  2. Mix taco seasoning (I used about 1/8 cup) into the rice.
  3. Placce chicken in a layer over the rice.
  4. Pour cream corn over the chicken
  5. Pour water over the whole thing (carefully, try not to wash the corn off the chicken).
  6. Bake at 400 degrees for 1 hour.
