Green Tomato Casserole Recipe

	Helewes / All my dishes 1 year, 1 month ago I don't know about you, I have allot of tomato's that won't get fully ripe up here in the NE. I put this together yesteday, and baked it last night. It was tasty and satisfied this Southern girls need for green tomatos. Prep:12m Cook:30m Servings:4	Helewes

Ingredients

4 green tomatoes, thickly sliced

1 tsp salt

1/2 tsp pepper

1 Tbs butter

1 cup grated cheddar cheese ( I used sharp ceddar )

1 cup crackers, crushed ( I used Ritz )

1 Tbs butter, melted

Directions

Preheat oven to 350°.

Lightly spray and 8-inch square baking dish with vegetable cooking

spray.

Layer green tomatoes with salt, pepper, butter and cheddar cheese in greased baking dish.

Bake at 350° for 30 minutes, or until the tomatoes are tender.

Sprinkle cracker crumbs on top and drizzle with butter.

Bake 5 minutes longer.
