Ingredients
  • 6 big juicy ripe tomatoes
  • 2 Tbs chopped cilantro
  • 2 Tbs chopped parsley
  • 2 Tbs fresh lemon juice
  • 1/3 cup maple syrup
  • 2 Tbs soy sauce
  • 1 tsp cumin
  • 2 tbs chopped dill
  • 1 large onion diced
  • 2 red bell peppers diced
  • 1/2 habernero pepper minced
  • 1 Tbs garlic minced
  • 1 bunch scallions chopped
  • 2 tbs chopped chives

Directions
  1. Cut tomatoes in half
  2. scoop out seeds
  3. dice intpo 1/2 inch cubes
  4. Combinbe liquid ingredients and toss with everything else.
  5. Salt and ppepr to taste
  6. Cover and refrigerate overnight to get full flavors
  7. Stir occasionally
  8. Serve with chips or gilled meat or fish
  9. lasts one week in the refrigerator
