Spiced Apple Muffins

- 2 cups flour shopping list
- 2 tsp baking powder shopping list
- 1/2 tsp baking soda shopping list
- 1/2 tsp ground nutmeg shopping list
- 2 tsp ground cinnamon shopping list
- 1 cup sugar shopping list
- 8 oz applesauce (I use Musselman's cinnamon applesauce) shopping list
- 3 large eggs shopping list
- 2 tsp vanilla shopping list
- 1 large Granny Smith apple, diced small shopping list
- 1 large Golden Delicious or gala apple, diced small shopping list
How to make it
- Preheat oven to 350 degrees and grease one muffin tin with cooking spray (I use canola oil spray).
- Combine flour, baking powder, baking soda, nutmeg and cinnamon in a medium sized bowl, and set aside.
- In a large bowl, beat sugar, applesauce and eggs together at medium speed until well-blended.
- Mix in vanilla.
- Add flour mixture to wet ingredients at little at time, at medium speed, until well-blended.
- Add apples and mix well.
- Using a ladle, scoop batter into pre-greased muffin tins and bake for 25 minutes or until a knife or toothpick inserted in the center comes out clean.
- Cool muffins on rack and store in a cool, dry place.
