Light Spinach Flounder Pinwheels

- 1/2 cup frozen chopped spinach thawed and drained shopping list
- 1/3 cup soft whole-wheat bread crumbs shopping list
- 2 ounces sliced pimiento drained shopping list
- 2 tablespoons grated white onion shopping list
- 1 tablespoon chopped pecans shopping list
- 1 teaspoon lemon juice shopping list
- 1/4 teaspoon dried marjoram shopping list
- 1/4 teaspoon salt shopping list
- 1/4 teaspoon freshly ground black pepper shopping list
- 4 flounder fillets at 4 ounces each shopping list
- 1/4 cup dry white wine shopping list
- 1 teaspoon grated lemon peel shopping list
How to make it
- Combine first nine ingredients in medium bowl then stir well.
- Spoon 3 tablespoons spinach mixture in center of each fillet.
- Roll up jellyroll fashion beginning at narrow end then secure with a wooden pick.
- Place rolls seam side down in a rectangular baking dish.
- Combine wine and lemon rind then pour over rolls.
- Cover with heavy duty plastic wrap and vent.
- Microwave on high for 7 minutes then allow to stand one minute.
- Remove and discard wooden picks then slice rolls and transfer to serving plates.
