Light Spinach Flounder Pinwheels Recipe
Easy and awesome appetizer bursting with incredible flavors. My catering partner and I serve these at bridal and baby showers and it is always one of the first to go. Very impressive and more importantly very tasty. Enjoy

Ingredients
  • 1/2 cup frozen chopped spinach thawed and drained
  • 1/3 cup soft whole-wheat bread crumbs
  • 2 ounces sliced pimiento drained
  • 2 tablespoons grated white onion
  • 1 tablespoon chopped pecans
  • 1 teaspoon lemon juice
  • 1/4 teaspoon dried marjoram
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 flounder fillets at 4 ounces each
  • 1/4 cup dry white wine
  • 1 teaspoon grated lemon peel

Directions
  1. Combine first nine ingredients in medium bowl then stir well.
  2. Spoon 3 tablespoons spinach mixture in center of each fillet.
  3. Roll up jellyroll fashion beginning at narrow end then secure with a wooden pick.
  4. Place rolls seam side down in a rectangular baking dish.
  5. Combine wine and lemon rind then pour over rolls.
  6. Cover with heavy duty plastic wrap and vent.
  7. Microwave on high for 7 minutes then allow to stand one minute.
  8. Remove and discard wooden picks then slice rolls and transfer to serving plates.
