How to make it

  • Preheat oven. Whisk the egg whites until stiff. Gradually fold in the sugar, then stir in the ground almonds and almond essence to form a firm paste.
  • Put teaspoonfuls of the mixture on to baking trays lined with baking parchment, spacing them slightly apart, and press a whole almond into each.
  • Bake for 12-15 minutes until just golden and firm to touch.
  • Leave to cool a little, then transfer from the baking trays to wire racks to cool completely. Store in airtight containers until ready to eat.
