A nice change on plain Potato Salad. Tapas is a twist on it!. Add your favorites and tweak it up a little. Good recipe for a change.

Ingredients
  • 1/3 cup Miracle Whip Dressing (more to taste)
  • 1 Tbsp. Mustard
  • 1/2 clove garlic, minced
  • 1 tsp. ground black pepper
  • 3 lb. potatoes, peeled, cut into
  • 1-inch cubes, cooked and cooled
  • 2 green onions, sliced
  • POSSIBLE ADDS:
  • Celery or Celery Seeds
  • Black Olives
  • Onions

Directions
  1. MIX dressing, mustard, garlic and pepper in large bowl.
  2. ADD potatoes and onions; mix lightly. Cover.
  3. REFRIGERATE at least 1 hour before serving.
  4. NOTE: Red-skinned or new potatoes are recommended for use in this salad since they cube neatly and readily absorb the dressing.
  5. Substitute: if neccessary you can use Real Mayonnaise for the MIRACLE WHIP Dressing. I use Mayo!
