Prune Cake With Butterscotch Glaze

- 2 c. sifted flour shopping list
- 1 tsp. baking sida shopping list
- 1/4 tsp. salt shopping list
- 1 Tbsp. cinnamon shopping list
- 1 Tbsp. nutmeg shopping list
- 1 Tbsp. allspice shopping list
- 1 c. cooking oil shopping list
- 1 1/2 c. sugar shopping list
- 3 eggs shopping list
- 1 tsp. vanilla shopping list
- 1 c. buttermilk shopping list
- 1 1/2 c. coarsely cut cooked anddrained prunes shopping list
- 1 c. chopped nuts shopping list
- 1 c. raisins shopping list
How to make it
- Mix dry ingredients---set aside.
- In a large bowl mix oil and sugar---add eggs one at a time, beating well.
- Stir in vanilla, and add dry ingredients alternately with buttermilk about 1/2 at a time.
- Stir in prunes, nuts, and raisins.
- Pour into ungreased 9 inch tube pan.
- Bake at 350 about 1 hour, or until cake tester comes out clean.
- About 20 minutes before cake is done, prepare glaze.

- Butterscotch Glaze for Prune Cake
- 1 c. brown sugar
- 1/2 c. buttermilk
- 1/2 stick butter
- 1/4 c. light corn syrup
- 1/2 tsp. baking soda
- 1/2 tsp. vanilla
- In 3 quart saucepan mix all ingredients over medium heat and bring to a full boil.
- Stir occasionally, boil 10 minutes.
- Remove cake from oven leaving in pan.
- Pour hot sauce over cake immediately.
- Allow cake to cool completely in pan before removing.
