How to make it

  • Mix dry ingredients---set aside.
  • In a large bowl mix oil and sugar---add eggs one at a time, beating well.
  • Stir in vanilla, and add dry ingredients alternately with buttermilk about 1/2 at a time.
  • Stir in prunes, nuts, and raisins.
  • Pour into ungreased 9 inch tube pan.
  • Bake at 350 about 1 hour, or until cake tester comes out clean.
  • About 20 minutes before cake is done, prepare glaze.

  • Butterscotch Glaze for Prune Cake
  • 1 c. brown sugar
  • 1/2 c. buttermilk
  • 1/2 stick butter
  • 1/4 c. light corn syrup
  • 1/2 tsp. baking soda
  • 1/2 tsp. vanilla
  • In 3 quart saucepan mix all ingredients over medium heat and bring to a full boil.
  • Stir occasionally, boil 10 minutes.
  • Remove cake from oven leaving in pan.
  • Pour hot sauce over cake immediately.
  • Allow cake to cool completely in pan before removing.
