Refrigerator Filled CCookies Recipe
I found this while I was going through some cookbooks while unable to move out of bed. It sounds so good I am going to make it as soon as my back and leg get better.

Ingredients
  • Cookie:
  • 1/2 cup butter
  • 1/4 cup Sugar
  • 1/4 cup Brown sugar
  • 1 Egg
  • 1 1/4 cup + 2 Tbls. flour
  • 1/4 teaspoon Soda
  • 1/4 teaspoon Salt
  • -
  • Fillings:
  • Jams, store bought or homemade, any flavor
  • -
  • Fruit Filling
  • 1 cup Dried apricots; cut up, or raisins
  • 1/2 cup Sugar
  • 1/2 cup Water
  • 1 cup Chopped walnuts, I prefer pecans or hazelnuts as I really do not like walnuts

Directions
  1. Mix shortening, sugars & egg thoroughly.
  2. Blend flour, soda & salt; stir into shortening mixture.
  3. Mix with hands.
  4. Press & mold into a long smooth roll about 1 1/2" in diameter.
  5. Wrap in wax paper & chill several hours.
  6. Heat oven to 400.
  7. With a sharp knife, cut 1/8" thick slices.
  8. Place a little apart on ungreased baking sheet.
  9. Put 1/2 tsp. filling on each cookie.
  10. Put another cookie on top.
  11. Bake 8-10 minutes.

  13. Fruit Filling:
  14. In a med. saucepan, mix apricots, sugar and water.
  15. Cook and stir over low heat for about 5 mins., until thick.
  16. Remove from heat and stir in walnuts.

  18. Mincemeat Filling:
  19. Combine all ingredients.
