Jammie Muffins

- MUFFINS: shopping list
- 1 1/2 c. all-purpose flour shopping list
- 1/3 c. granulated sugar shopping list
- 2 tsp. baking powder shopping list
- 1/2 tsp. salt shopping list
- 1 egg, beaten shopping list
- 1/2 c. milk shopping list
- 1/4 c. vegetable oil shopping list
- 1 tsp. vanilla extract shopping list
- 1/2 c. desired flavored jam, room temperature and stirred lightly to loosen gel shopping list
- TOPPING: shopping list
- 2 TBSP. butter or margarine, melted shopping list
- 1/4 c. granulated sugar shopping list
How to make it
- Preheat oven to 400 degrees F. Grease a 24-cup miniature muffin pan.
- In a large bowl, combine flour, sugar, baking powder, and salt. In a separate bowl, combine egg, milk, oil, and vanilla. Add to dry ingredients, stirring just until blended.
- Fill greased miniature muffin pans two-thirds full with batter. Top each with a 1/4 tsp. jam. Gently swirl jam into batter with toothpick.
- Bake 12 - 15 minutes, testing for doneness with a toothpick. Remove from pans and brush with melted butter; sprinkle with sugar. Serve warm.
- You can also use a regular-sized muffin pans; bake a few minutes longer and check for doneness as above. You will get 8 - 12 muffins in a regular-size muffin tin.
- To reheat: Wrap muffins in aluminum foil and bake in 350 degree oven for 10 minutes.
