Cream Wafers

- COOKIES: shopping list
- 1 c. soft butter shopping list
- 1/3 c. whipping cream shopping list
- 2 c. four shopping list
- granulated sugar shopping list
- CREAMY FILLING: shopping list
- 1/4 c. soft butter shopping list
- 3/4 c. confectioner's sugar shopping list
- 1 tsp. vanilla shopping list
- Few drops food color shopping list
- Few drops water, if needed shopping list
How to make it
- ***Prep time includes chill time; baking time is for all cookies.***
- Cookies:
- Mix butter, cream, and flour. Chill at least 1 hour.
- Heat oven to 375 degrees F. Roll about 1/3 of dough at a time 1/8 inch thick on floured cloth-covered board (keep remaining dough refrigerated until ready to roll). Cut into 1-1/2 inch circles.
- Transfer rounds with spatula to piece of waxed paper that is heavily covered with granulated sugar; turn each round so that both sides are coated with sugar. Place on ungreased baking sheet. Prick rounds with a fork about 4 times.
- Bake 7 - 9 minutes or until just set but not brown; cool. Put cookies together in pairs with Creamy Filling. Makes about 5 dozen.
- Creamy Filling:
- Cream butter, sugar, and vanilla together until smooth and fluffy. Tint with few drops food color. Add few drops of water if necessary for proper spreading consistency.
