Corn and Bacon Casserole

- 6 strips bacon shopping list
- 1/2 c. chopped onion shopping list
- 2 T flour shopping list
- 2 cloves garlic, minced shopping list
- 1/2 tsp. each of salt & pepper shopping list
- 1 c. sour cream shopping list
- 3 1/2 c fresh or frozen corn kernels shopping list
- 1 T chopped fresh parsley shopping list
- 1 T chopped fresh chives shopping list
How to make it
- In large skillet, cook bacon until crisp. Drain, reserving 2 T of drippings. Crumble bacson, set aside. Saute onion in drippings until tender. Add flour, garlic, s&p. Cook and stir until bubbly, cook and stir 1 minute more. Remove from heat and stir in sour cream until smooth. Add corn, parsley and half of the bacon; mix well. Pour into 1 qt. casserole dish. Sprinkle with remaining bacon. Bake, uncovered, at 350 for 20-25 minutes or until heated through. Sprinkle with chives.
