  • 2c. chopped cooked chicken
  • 1c. chopped red bell pepper
  • 1/4c. chopped fresh cilantro
  • 2 cloves garlic, minced
  • 1 jalapeno seeded, chopped
  • 1-15oz can shoe peg corn, drained
  • 1-15oz can black beans, drained
  • 1-15oz can tomato sauce
  • 1-10oz can rotel diced with green chilies, drained
  • 1-8oz can tomato sauce
  • 2 tsp. ground cumin
  • 1 tsp. chili powder
  • 1 tsp. salt
  • 1-16oz sour cream
  • 1-8oz cream cheese, softened
  • 6 oven ready lasagna noodles
  • 1-8oz Monterey Jack cheese, shredded
  • 1-8oz Cheddar cheese, shredded

Directions
  1. In Dutch oven combine chicken and the next 12 ingredients.
  2. Bring to a boil then reduce heat and simmer 15 minutes.
  3. In a bowl beat sour cream and cream cheese.
  4. Preheat oven to 350.
  5. Lightly grease a 13 x 9 dish.
  6. Spoon 1/3 of the meat into dish.
  7. Top with 3 noodles.
  8. Spread 1/2 of cheese mixture, top with 1/3 of meat mixture.
  9. Sprinkle with half of grated cheeses. Repeat.
  10. Bake 35 - 45 minutes.
  11. Let rest 10 minutes before serving.
