Leftover Roast Pot Pie Recipe
I have this in the oven right now...after not planning anything for dinner, I decided to see what leftovers we had. This is a great way to use little bits of good leftovers.

Ingredients
  • 2 deep dish pie shells
  • 1 onion, chopped
  • 1/2 to 1 cup mashed potatoes
  • 1 to 2 cups leftover beef roast
  • 1 cup cooked cabbage
  • 1 cup roasted sweet potatoes

Directions
  1. In a skillet, saute the onion in some of the roast liquid until tender. Add all of the remaining ingredients and cook until thoroughly heated. Pour into one of the pie shells and top with the other pie shell. Cut several slits on top. Bake at 350* for 30-35 minutes or until the crust is nicely browned.
  2. You could easily substitute other meats and vegetables for this pie.
