Holiday Apricot Raisin Orange Pecan Bread Recipe
A combination of apricots, apricot nectar, raisins, pecans, orange rind . Explodes with flavor. Use your favorite pans. Perfect with a cup of coffee. Makes a nice gift.

Ingredients
  • 1-1/4 cups (12 ounces) apricot nectar
  • 1-1/2 cups raisins (your choice, golden or dark)
  • 1/3 cup (twelve) dried apricots, cut fine
  • 1 tablespoon fresh grated orange rind
  • 2-3/4 cups flour
  • 2 teaspoons soda
  • 1 teaspoon salt
  • 1 tablespoon Crisco shortening
  • 1 cup sugar
  • 1 egg
  • 1/3 cup evaporated milk
  • 1/2 cup chopped pecans

Directions
  1. In saucepan, combine apricot nectar, raisins and dried apricots
  2. Simmer for 5 minutes
  3. Add grated orange rind
  4. Let cool
  5. Sift the flour, soda and salt
  6. Blend together the Crisco, sugar, egg and evaporated milk
  7. Add the dry ingredients and the fruit to creamed mixture, beginning and ending with dry ingredients
  8. Add pecans
  9. Pour into your favorite *well-greased* pans
  10. Bake in a 350 degree oven for about 50 minutes, or until toothpick placed in center comes out clean
  11. Miniature pans work very well
