Beef Braised With Mahogany Onions Recipe

Ingredients
  • 2 pounds boneless chuck roast
  • 1/4 pound bacon cut into slivers
  • 4 medium onions very thinly sliced
  • 5 garlic cloves chopped
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt

Directions
  1. Preheat oven to 325.
  2. Choose a heavy casserole large enough to accommodate the meat snugly.
  3. Put the bacon, sliced onions and garlic on the bottom of the pot.
  4. Top with the meat and season with pepper.
  5. Cover tightly and cook 3 hours turning the meat after the first hour and every half hour after that until meat is very tender and brown and the onions are mahogany color.
  6. Season with salt and more pepper if necessary.
  7. Slice the meat very thin and pour the juices and onion mixture over it and serve hot.
