How to make it

  • Dissolve yeast in 1/4 cup water.
  • In a pan scald milk and add to it the salt, sugar and butter, when the butter is melted, pour out of the pan into mixing bowl.
  • When milk is cool add yeast and flour and stir to mix thoroughly.
  • Dough will be sticky---turn onto a heavily floured board (about 1 cup) and begin to knead.
  • Knead at least 10 minutes or longer if desired, form in a smooth ball and place in a greased bowl, cover with damp towel and let rise at least 1 hour.
  • Punch down and form into rolls or loaf, let rise one more hour and bake.
  • By adding 1 egg, this makes excellent donuts or cinnamon rolls.
  • By adding water instead of milk, this makes excellent French Bread.
  • Bake at about 350 - 375 degree oven for loaf 45 minutes, for rolls about 15 minutes.
  • Yield 1 loaf or 12 rolls.

    Help! I am struggling to learn to make good yeast bread. This was my best attempt so far, but . . . the rolls were a little tough/thick/dry. Not inedible like my last try, but not right. Did I use too much flour? Knead too much? Not let it rise enough? Help!
