Molasses Fruit and Nut Muffins

- 1 pound butter, room temperature shopping list
- 2 1/2 cups brown sugar shopping list
- 7 ounces molasses shopping list
- 5 eggs shopping list
- 6 1/2 cups flour shopping list
- 1 teaspoon baking soda shopping list
- 1 teaspoon baking powder shopping list
- 1 cup buttermilk shopping list
- 1 to 2 cups fruit (fresh or frozen berries, apricots, peaches, banana) shopping list
- 1 cup nuts shopping list
How to make it
- In a large mixing bowl, cream together butter and brown sugar.
- Add remaining ingredients, mixing well after each addition.
- Spray muffin tins with nonstick spray.
- Fill cups almost to top.
- Bake at 325 degrees for 30 to 35 minutes.
- Yield depends on size of muffin tins
