Dust Bowl Soup

- 2 lbs beef bones shopping list
- 9 cups Cold water shopping list
- 1/2 cup dry pinto beans shopping list
- 1/2 cup black-eyed peas shopping list
- 1/8 teaspoon dried red peppers crushed shopping list
- 1 large onion diced shopping list
- 3/4 cup celery chopped shopping list
- 1 large celery top sprig shopping list
- 1 medium potato finely diced shopping list
- 1 clove Garlic minced or mashed shopping list
- 1 tablespoon salt shopping list
- 1 Bay leaf shopping list
- 2 teaspoons chili powder shopping list
- 1/8 teaspoon black pepper shopping list
How to make it
- Wash beef bones well and place in a large kettle with water. Cover, bring to a boil, then simmer very slowly for 2 hours. Add beans, black-eyed peas and dried red peppers. Cover and simmer for 6 hours more. Skim soup. Add remaining ingredients, cover and simmer for 1 - 1 1/2 hours longer or until vegetables are tender. Correct seasoning with salt.
