Baked Norweigan Pancake Recipe
BAKED NORWEGIAN PANCAKE This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the White Estate in Frisco, Texas in 1984.

Ingredients
  • 1/4 cup butter
  • 4 eggs
  • 1-1/2 cups milk
  • 6 tablespoons butter
  • 1/2 cup sugar divided
  • 3/4 cup regular all purpose flour
  • 1/4 teaspoon salt
  • 3 cups mixed berries
  • Sour cream
  • Brown sugar

Directions
  1. Put butter in 9” baking dish and place dish in 425 oven for 10 minutes but do not burn.
  2. While that is heating beat together eggs, milk, butter, 3/4 cup sugar, flour and salt until smooth.
  3. Remove hot pan from oven and add mixture then quickly return to hot oven for 30 minutes.
  4. Add remaining sugar to 3 cups berries and stir to dissolve.
  5. When pancake is done remove from oven then spoon berries into center and cut in wedges.
  6. Serve with sour cream and brown sugar.
