Ingredients
  • 3 medium zucchini, sliced and quartered
  • 3 medium tomatoes, peeled and quartered
  • 1 onion, coarsely chopped
  • 1/2 green pepper, coarsely chopped
  • 1 tsp oregano
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp or more garlic powder
  • 8 oz shredded mozzarella cheese
  • Grated parmesan cheese

Directions
  1. Simmer zucchini, tomatoes, onion, green pepper and seasonings until juice is almost gone; approximately 30 minutes. Place in a casserole dish and cover with cheeses. Bake at 350 degrees until cheese melts.
