Spiked Butternut Squash And Apple Soup

- 2 lbs butternut squash shopping list
- 1 large apple peeled and cored shopping list
- 2 Tbs olive oil shopping list
- 1 small onion chopped shopping list
- 1 large carrot chopped shopping list
- 1 cup celery chopped shopping list
- 1 bay leaf shopping list
- 5 cups vegetable or chicken broth shopping list
- 1 cup cream shopping list
- 1 lemon, zest and juice shopping list
- 1/2 tsp pepper shopping list
- 1 cup crumbled feta or goat cheese shopping list
- 3 shots of Southern Comfort whiskey( optional ) shopping list
How to make it
- Roast squash and apple in a 400 F oven till tender
- Cool and peel sqaush
- Heat oil and saute onions, carrots, celery and bay leaf till veges tender in pot
- Remove bay leaf and add broth.
- Puree scraped out and seeded squash and apple in a blender.
- Return to pot.
- Add cream, lemon zest and juice
- Heat through.
- Add pepper, cheese and Southern Comfort
- Serve hot
