Spiked Butternut Squash And Apple Soup Recipe
A deliciously different twist on squash/apple soup!

Ingredients
  • 2 lbs butternut squash
  • 1 large apple peeled and cored
  • 2 Tbs olive oil
  • 1 small onion chopped
  • 1 large carrot chopped
  • 1 cup celery chopped
  • 1 bay leaf
  • 5 cups vegetable or chicken broth
  • 1 cup cream
  • 1 lemon, zest and juice
  • 1/2 tsp pepper
  • 1 cup crumbled feta or goat cheese
  • 3 shots of Southern Comfort Whiskey( optional )

Directions
  1. Roast squash and apple in a 400 F oven till tender
  2. Cool and peel sqaush
  3. Heat oil and saute onions, carrots, celery and bay leaf till veges tender in pot
  4. Remove bay leaf and add broth.
  5. Puree scraped out and seeded squash and apple in a blender.
  6. Return to pot.
  7. Add cream, lemon zest and juice
  8. Heat through.
  9. Add pepper, cheese and Southern Comfort
  10. Serve hot
