Turkey Broccoli Lasagna Recipe
We are coming up on that time of year when we will have leftover turkey we need a home for. This is one my sister came up with a few years ago and it is yummy. Enjoy

Ingredients
  • 2 cans cream of broccoli soup
  • 10 ounce package frozen chopped broccoli
  • 2 tablespoons olive oil
  • 2 carrots thinly sliced
  • 1 large white onion chopped
  • 2 cloves garlic minced
  • 1-1/2 cups turkey cooked and chopped
  • 12 lasagna noodles
  • 16 ounces mozzarella cheese
  • 15 ounces ricotta cheese
  • 2 eggs
  • 2 tablespoons parmesan cheese grated

Directions
  1. Heat broccoli soup and frozen broccoli in saucepan until broccoli is thawed.
  2. Heat olive oil over medium high heat in 10" skillet until hot.
  3. Cook carrots, onion and garlic until lightly browned then reduce heat and stir in 1/4 cup water.
  4. Cover and simmer 15 minutes then remove to bowl.
  5. Stir turkey into carrot mixture.
  6. Cook lasagna noodles as directed on package then drain well.
  7. Mix mozzarella, ricotta, eggs and parmesan then heat oven to 375.
  8. Spread 1 cup broccoli sauce in rectangular baking dish.
  9. Arrange half of the noodles over remaining noodles, cheese mixture then sauce.
  10. Bake 45 minutes then remove from oven and allow to stand 10 minutes before serving.
