Fantastic Salsa

- 2 pounds of plum /roma tomatoes shopping list
- 3 gloves of minced fresh garlic shopping list
- 1 small red onion finely minced shopping list
- 1/8 pound of roasted and peeled fresh (hot) Hatch New Mexico green chiles (hot) chopped/finely chopped (if you can't get these use frozen Beuno Green Chiles or canned Hatch hot green chiles - equivilant amount shopping list
- 3 tablespoons of grape seed oil - can subsitute olive oil but it will not be as good shopping list
- juice of 1 medium lemon shopping list
- 1 jalapeno finely chopped shopping list
- 1 good handfull of cilantro - finely chopped with no stems shopping list
- salt and pepper to taste shopping list
How to make it
- Roast fresh chiles until skins are charred - place in a sealed container and let steam. Peel chiles and then chop finely.
- Boil tomatoes just until the skins crack - cool and then remove skins; remove seeds and chop finely
- Chop raw onions and garlic and add to mix
- Chop jalapeno and add to mix
- add juice of lemon
- add salt and pepper and stir
- cover and refridgerate for 4 hours before serving
- enjoy with tortilla chips or use as a topping for other entrees
