Ingredients
  • 2 pounds of plum /roma tomatoes
  • 3 gloves of minced fresh garlic
  • 1 small red onion finely minced
  • 1/8 pound of roasted and peeled fresh (hot) Hatch New Mexico green chiles (hot) chopped/finely chopped (if you can't get these use frozen Beuno Green Chiles or canned Hatch hot green chiles - equivilant amount
  • 3 tablespoons of grape seed oil - can subsitute olive oil but it will not be as good
  • Juice of 1 medium lemon
  • 1 jalapeno finely chopped
  • 1 good handfull of cilantro - finely chopped with no stems
  • Salt and Pepper to taste

Directions
  1. Roast fresh chiles until skins are charred - place in a sealed container and let steam. Peel chiles and then chop finely.
  2. Boil tomatoes just until the skins crack - cool and then remove skins; remove seeds and chop finely
  3. Chop raw onions and garlic and add to mix
  4. Chop jalapeno and add to mix
  5. add juice of lemon
  6. add salt and pepper and stir
  7. cover and refridgerate for 4 hours before serving
  8. enjoy with tortilla chips or use as a topping for other entrees
