How to make it

  • Roast fresh chiles until skins are charred - place in a sealed container and let steam. Peel chiles and then chop finely.
  • Boil tomatoes just until the skins crack - cool and then remove skins; remove seeds and chop finely
  • Chop raw onions and garlic and add to mix
  • Chop jalapeno and add to mix
  • add juice of lemon
  • add salt and pepper and stir
  • cover and refridgerate for 4 hours before serving
  • enjoy with tortilla chips or use as a topping for other entrees
